Online, only a very small percentage of your visitors will buy on their first visit to your site. So, if you don't get their name and email address, you just lost them forever. Instead, you can invite them to subscribe to free mailing lists and keep in touch with them later on.

The second advantage of a free mailing list, if you are only starting out, is that it allows you to prove to people that you really know your stuff.
